Orange Marmalade is generally prepared at the time of Christmas when these are in season and shared as a gift among friends and relatives. I have also made this for Christmas and my laziness made me to post it now. I have used navel orange you could use any variety of your choice. I am sure you will love this flavourful marmalade.

Easy Orange Marmalade recipe





Prep time

Oranges - 4 large

Sugar - 2 cups (same weight of sugar as the weight of your oranges after peeling)

Lemon- 1/2

PROCEDURE:
  • Use a peeler or knife to remove a thin layer of zest from the oranges. Slice the zest thinly and put it aside.(I used navel orange. If you use kinnow or clementine peel them and scrape the white part using a spoon or knife and proceed)
  • Peel the white pith away from the oranges. Remove seeds. Chop the oranges finely and put them in a large bowl along with the zest. 
  • Measure out the same weight or volume of sugar as your peeled oranges, and add it to the bowl. (1 cup sugar for each cup of chopped oranges) 
  • In a deep vessel cook the oranges and the peel with sugar. 
  • Smear a little bit of marmalade onto a cold plate and check the consistency . If it’s not thick enough yet, then simmer it a little longer.
  • While marmalade is simmering, prepare some clean jars by pouring boiling water over them to sterilize them.
  • When marmalade is finished, ladle it into the jars. Sterilize on jars for longer shelf life.

Chocolate icecream is my hubbys favourite. My favourites often change when my taste buds are introduced to a new flavour. Even my kid likes chocolates and icecreams. When I made the first batch it was during Christmas and cold outside. So I didn't serve them at that time. On the weekend we went shopping and we bought a chocolate ice cream for my kid in a mall kiosk and I tasted the ice cream and it tasted really wacky. It was not chocolaty and the taste of cocoa dominated. Then I felt my ice cream was far better than the store bought one. After that the same week I served the ice crem which I made at home for my kid. He liked it a lot and once the serving finished he was opening the freezer and asking for more. So I made another batch for him last two weeks before. Do try this ice cream at home; you are going to love it!

Eggless Chocolate Ice cream recipe

INGREDIENTS:
Whipping Cream- 1 cup
Powdered Sugar| icing sugar- 1/2 cup
Vanilla essence- 1 teaspoon
Milk- 1/2 cup
Cream| condensed milk- 1/4 cup (optional)
Cocoa powder-1/4 cup
Chocolate- 1/4 cup

Eggless Chocolate Ice cream recipe

PROCEDURE:
  • Heat the milk (and cream|condensed milk if you are using)in a pan, once it starts to boil add the cocoa powder and stir well to relieve the raw cocoa taste.
  • Microwave the chocolate for thirty seconds and add the chocolate with this milk mixture and stir well and immediately switch off the gas.(do not cook the chocolate just add the chocolate and mix well in the heat to combine with milk) Set aside and allow to cool.
  • Whip the cream once it starts to form peaks add sugar little by little. Once it starts to form stiff peaks add the vanilla essence and cooled chocolate mixture; whip once to combine.
  • Transfer the cream mixture into a steel bowl or an airtight container and seal well and freeze foe about 4 hours.
  • Remove the ice cream from freezer and whip well to avoid ice crystal formation.
  • Likewise do it for 3-4 times freeze and whip till the ice cream is creamy and without any ice crystals.
  • Note: You could follow double boiler method too for melting chocolate.
  • You could use 1/2 cup of Chocolate too for more taste instead of cocoa powder.
  • First time when i made this icecream i added cream|condensed milk with milk but next time i prepared without that. Both tastes delicious.

Broccoli Paruppu Usili is a tasty accompaniment with rice and rasam. Broccoli tastes delicious with the dal and the fennel seeds flavour. Generally usili is prepared with the veggies like carrots or beans sometimes together. Here I have given a healthy twist to the traditional recipe. Simple yet a delicious broccoli recipe with a South Indian touch. I had half of the broccoli left over after preparing the Broccoli Potato stir fry (South Indian style) recipe. The South Indian taste from the earlier  recipe made me to create another innovative healthy dish.

Broccoli Paruppu Usili recipe

INGREDIENTS:
Chana dal- 1/2 cup
Toor dal- 1/2 cup
dry red chillies- 3-4
Fennel seeds- 1/2 teaspoon
Jeera|cumin seeds- 1/2 teaspoon
Salt- to taste
Broccoli- 1/2 head
Oil- 2 teaspoon
Mustard seeds- 1/2 teaspoon
Curry leaves- 2 strands
Onion, chopped-1
Salt-to taste
Broccoli Usili recipe

PROCEDURE:
  • Cut the broccoli florets in 3-4 to small pieces.
  • Soak the chana and toor dal together for 1-2 hours in water. 
  • Drain the water and add the dal inside the blender jar with dry red chillies, fennel seeds, jeera and salt; coarsely grind it.
  • Heat water in a idli steamer and spread the dal mixture inside the plate; steam it for 5 minutes.
  • Remove the idli plate and allow it to cool. If any lumps are formed during steaming, break and set aside.
  • Heat oil in a pan and splutter mustard seeds; add curry leaves.
  • Add chopped onion and cook till soft. Add the chopped broccoli with a pinch of salt and close with a lid and cook for about a minute or two till the florets almost get cooked.
  • Open the lid and add the steamed dal mixture and add mix well and cook for a minute and switch off the gas.
  • Note: Use blender jar to break the lumps if you find more in the dal mixture.
  • You could use green chillies with onion and reduce the red chillies too.

Broccoli Potato Roast| Broccoli potato fry| Broccoli potato Stir fry| Broccoli tawa roast| Spicy Broccoli Potato Roast  is an easy to prepare healthy and also a lip smacking combination prepared the South Indian way. Broccoli has many health benefits but the taste of it does not make people fancy it . So those who does not like broccoli this is the must try dish. I found broccoli goes well with potatoes when I made broccoli potato masala for chapatis using a tomato based gravy. So I wanted to try a variation of that which suits for plain rice and curry. My research in that produced a quick and tasty variation which is so healthy as it includes less oil and no coconut. After trying out this recipe with in two months I have prepared around 6 times and relished my taste buds!

Broccoli Roast recipe

INGREDIENTS:
Broccoli, chopped- 1/2 head
Potatoes, chopped- 2-3
Oil- 2 teaspoons
Salt- to taste
Turmeric powder- 1/2 teaspoon
Red chilli powder- 1 1/2 teaspoons
Coriander powder- 1 teaspoon
Hing- pinch (optional)

Spicy Broccoli Potato Roast

PROCEDURE:

  • Heat oil in a pan and add the chopped potato and roast for two minutes. Now sprinkle some salt and allow to roast till half cooked.
  • Add the broccoli florets with a pinch of salt and roast for a minute with potato and close with a lid and allow to cook for two minutes. Sprinkle a tablespoon of water if required.(Do not over cook which will lose the nutrients and also the green colour)
  • Open the lid and srpinkle turmeric powder, red chilli powder, coriander powder and hing ; roast for a minute till the masalas well coated and the raw flavour leaves. Make sure the veggies cooked well and switch off the flame.
  • Serve with rice and rasam, paruppu curry combo or even you could serve with chapatis.
  • Note: Add some capsicum cubed with broccoli for variation.

Masala Vada| Lentil Fritters is a traditional snack item generally served at teatime very much popular in South India. It is also a popular street food found in all petty tea shops, railway stations, parks..etc. I like paruppu vadai than Ulunthu Vadai|Medhu Vadai because of its crunchiness. I have tried many healthy variations in this snack by adding different veggies, herbs, greens, oats such as Methi Masala Vadai, Beetroot Masala Vadai, Oats Masala Vadai, Keerai Vadai, Mint Masala Vadai.
Perfect evening snack liked from old to new generation. Tasty crunchy filling snack with a cup of hot tea.

Paruppu Vadai recipe

Preparation Time: 10 minutes+soaking time
Cooking Time: 20 minutes
Cuisine: Tamil
Makes: 10-12 nos.

INGREDIENTS:
Chana dal| Split chickpeas- 1 cup
Dry red chilli-2
Onion, chopped-1 small
Green chillies, chopped- 2
Ginger, finely chopped- 1/2 teaspoons
Curry leaves- 1 strand
Fennel seeds- 1/2 teaspoon
Cumin seeds- 1/2 teaspoon
Asafetida- 1/4 teaspoon
Salt- to taste
Oil-to deep fry

Masala Vadai recipe

PROCEDURE:
  • Soak chana dal with dry red chillies in water for 2 hours.
  • Meanwhile chop the onion, green chillies, ginger and curry leaves.
  • Drain the water totally and transfer that on a blender jar.(If water is there the vadas wont turn crispy)
  • Coarsely grind and transfer it on a bowl.
  • Now fennel seeds, jeera, onion, green chillies, ginger, curry leaves, asafetida and salt.
  • Mix well and check for salt. You could add a teaspoon of corn flour to make more crispy vadas.
  • Shape vadas using your left hand palm and right hand fingers.
  • Heat oil in a deep pan and deep fry the vadas till crispy.
  • Note:You could use half a cup chana dal and half a cup of toor dal if you prefer. 
  • You could replace green chillies with dry red chillies and soak them with chana dal and grind them together.
  • You could add the fennel seeds and jeera together with chana dal while grinding too.

Pomegranate Strawberry Mocktail| Strawberry Pomegranate Mojito is an easy to prepare drink which is best for summer. I made this for the Valentines day theme. It was absolutely delicious the added mint and pomegranate pearls in that drink adds crunch  and texture to the drink.

I am sure you are going to love this drink. The citrus adds a kick to the drink. Easy tasty colourful drink! Do try this drink and let me know the outcome.


Pomegranate Strawberry Mocktail recipe
Preparation Time: 5 minutes
Makes: 3-4 small glasses

INGREDIENTS:
Strawberry syrup- 2-3 tablespoons
Pomegranate juice, home made or store bought- 1 cup
Lemon-1
Mint leaves-few
Soda| water-1 cup
Ice cubes- to serve

PROCEDURE:
  • In a jug or bowl add the ice cubes and add the strawberry syrup and then add the lemon juice from half the lemon.
  • Crush and bruise the remaining half lemon with some mint leaves slightly to release the flavours.
  • Add this on to the bowl|jug and add the pomegranate juice and soda|chilled water to dilute the juice as per your taste.
  • On each serving glass add some fresh pomegranate pearls and add the mocktail with some ice cubes and serve chilled.
  • Note: You could use fresh strawberries instead of strawberry syrup in this recipe. Grind the strawberries with some sugar and use instead of strawberry syrup.
  • If you use home made pomegranate juice add some sugar while making the juice.

Strawberry Falooda| Faluda is a variation of the Rose flavoured falooda which is generally prepared. I had some leftover strawberry syrup in my fridge after making some Strawberry Sharbath i wanted to finish it off before spoiling. So i have given a twist to the rose falooda and made this strawberry falooda and it came out really well. You could use fresh strawberries too for making this yummy drink. Quick to make drink perfect for summer to reduce the heat! I am preparing this for Valentines Day
There are many variations in falooda flavours such as Kesar, Rose flavoure - are the predominant ones and the other flavours such as pista, fruit flavours such as mango, royal flavour which is a colourful mix also there. Will share the recipe once i make them at home.

Strawberry Vermicelli Drink

INGREDIENTS:
Srawberry Syrup- 2 tablespoons|glass (or) Strawberries- 10 and sugar-2-3 tablespoons
Vermicelli|Sago seeds- 1/2 cup I used rice vermicelli you could use normal one
Milk- 3 cups
Sugar- 2 tablespoons
Sabja seeds| Basil seeds-2 tablespoons
Ice cream- 2 scoops

Strawberry Falooda recipe

PROCEDURE:
  • Soak the sabja seeds in 1/4 cup of water.
  • Boil milk with sugar add remove a cup of milk and allow to chill. In the remaining milk cook the vermicelli.(If you use normal vermicelli slightly roast and cook)
  • Once the vermicelli becomes soft remove from fire and set aside.(This should be in pouring consistency, if not add some milk and just boil)
  • Prepare the Strawberry syrup by following the procedure.(or) Blend strawberries and sugar in a blender jar. (Add some boiled chilled milk and blend once if you like to prepare the drink in pink colour like milk shake)
  • In two tall glasses add two tablespoons of the strawberry syrup(or) the strawberry  puree, then top it with the vermicelli milk, then with chilled milk, drained sabja seeds. Finally add a scoop of vanilla or strawberry ice cream.
  • Garnish with nuts or fresh strawberries.
  • Note: Adjust the sweetness according to your taste.
  • You could use normal vermicelli or rice vermicelli. If you use normal one slightly roast and use.
  • You could replace vermicelli with sago seeds to.

Strawberry yogurt is a tasty fruit flavored yogurt which could me made with low fat or full fat yogurt. Healthy with the goodness of strawberries and the probiotics present in yogurt good for digestion. You could serve this as a dessert or in small quantities with breakfast. Goes well with crepes, pancakes, waffles, any cereals, snackbars. You could use this fruit yogurt for layering parfait too.

Quick healthy tasty dessert prepared in minutes without much ingredients. Suits for Valentines day too as the colour is with red and pink combination. Do try this healthy dessert or breakfast at this strawberry season!

Strawberry Yogurt recipe

INGREDIENTS:
Strawberries- 10-12 nos
Sugar- 1/4 cup
Hung Yogurt- 1 cup (i used low fat)
Fresh strawberries, chopped- to garnish

PROCEDURE:
  • Add 2 cups of thick yogurt in a muslin or cotton cloth and allow to strain for 30 minutes. Squeeze to remove water and set aside.
  • Remove the stem and leaves from strawberries and roughly chop them. Add the chopped strawberries inside blender jar and add the sugar and blend to make a paste.
  • Remove around 4-6 teaspoons of  strawberry puree and  add the hung curd with the remaining strawberry puree inside the blender.
  • Blend once or twice to make combine well. Do not pulse more as the jar heated up and heat dilutes the curd. So carefully do that.
  • In small serving glasses add  one or two teaspoons of reserved strawberry puree(You could replace it with strawberry syrup too if you have less now of strawberries with you or skip this layer) and then top it with the fruit yogurt and garnish with freshly chopped strawberries.
  • Note: Adjust the sweetness according to your taste.
