A Chinese cuisine, Fried rice is made from steamed
rice stir-fried in a wok, often with other ingredients, such
as eggs, vegetables, and meat. The oil may be
seasoned with aromatics such as garlic before the rice and other ingredients
are stir-fried together in a wok.
The other ingredients used in fried rice are greatly varied.
They can include eggs, meat (chicken, beef, or cured
pork), seafood (shrimp or lobster), vegetables (carrots,
broccoli, bean, celery, peas, corn), mushrooms, spices and peppers,
and soy sauce or sometimes oyster sauce.
INGREDIENTS
Basmathi rice-1 cup
Salt- as required
Sugar- 1/4+1/4 teaspoon
Sugar- 1/4+1/4 teaspoon
Olive oil-5 teaspoons
Eggs-2
Garlic-1clove
Carrot (chopped)-1
French Beans (chopped)-5
Sweet corn (fresh/frozen)-5tsp
Spring onion (chopped)-2
Aji no moto-pinch (optional)
Soy sauce-1tbsp
Pepper powder- pinch
PROCEDURE:
- In a shallow broad pan/wok add 1tsp oil. Crack the eggs, scramble with a pinch of salt and transfer that into a plate.
- Half cook the rice with salt and drain the water.
- In a pan add oil then add chopped garlic followed by all vegetable, salt, 1/4 teaspoon of sugar and ajinomoto. Sprinkle little water if needed to cook the vegetables. Then add the spring onion, scrambled egg and rice (already half cooked) and toss well.
- At last add remaining 1/4 teaspoon of sugar, soy sauce and pepper powder and toss well; then put off the gas.
- Serve hot with any spicy curry.
