'Vepudu' in telugu means 'Fry'. It is an Andhra cuisine. This spicy fried mushrooms goes well with rice, rasam, curd, fried rice, noodles..etc. Perfect dish for Spice Lovers especially in this cool climate. Preparation of this dish almost like mushroom 65 except the tempering and addition of onion and green chilli to make it extra spicy. Without tempering this dish can be served as an Appetizer too. Andra cuisine is famous for its spiciness in all the dishes.


INGREDIENTS:
Mushroom, chopped- 250 grams
All purpose flour/ Maida- 3 tablespoons
Cornflour- 1 ½ tablespoons
Chilli powder/ Kashmiri chilli powder- 1 teaspoon
Garam masala- ½ teaspoon
Pepper powder- ¼ teaspoon
Ginger garlic paste- 1 teaspoon
Salt- to taste
Lime juice- 1 teaspoon
Oil- 1 cup
Onion, chopped – 1
Green chilli, chopped- 2

To temper:
Oil- 2 teaspoons
Mustard seeds- 1 teaspoon
Fennel- 1 teaspoons
Curry leaves- 1 sprig

PROCEDURE:
  • Cut each mushroom into 6 pieces.
  • In a bown take chilli powder, garam masala, pepper, ginger garlic paste, salt, lime juice, maida and corn flour and mix well. Then add water and mix well as semi thick slurry.
  • Keep the mushroom and mix well without damaging the mushrooms.
  • Deep fry in hot oil on medium flame.
  • In a pan heat oil, mustard seeds and fennel seeds. When the mustard seeds splutter add the curry leaves.
  • Then add the onion and green chillies. Cook till the onion becomes slightly soft and golden.
  • Serve hot.
