Chilli Bajji is a famous snack of Ooty. Hope it is, everybody's favourite spicy snack. An easy to prepare evening snack. The fried chilli is so flavourful, spicy and  also delicious. Perfect snack for rainy or cool weather with a hot cup of coffee or tea.


INGREDIENTS:

Bajji Chilli -6
Gram flour- 1 cup
Rice flour- ½ cup
Corn flour- 1 tablespoon
Chilli powder- 1 teaspoon
Ajwain (Omam)/ jeera (cumin seeds)- ½ teaspoon
Asafetida- ¼ teaspoon
Salt- to taste
Oil- 1 tablespoon
Baking soda/ Appam soda/ Eno- ¼ teaspoon
Oil- for deep frying


PROCEDURE:

  • In a broad bowl dry mix all dry ingredients gram flour, rice flour, corn flour, chilli powder, asafetida, salt, oil and baking soda.
  • Then add water little by little and mix and make a thick slurry. Check the salt in the batter. Consistency of the batter should be if you take and drop the batter in a spoon it should not fall easily.
  • Slit the bajji chillies and remove the seeds inside.
  • Dip the chillies and pour inside also some batter though the slit.  Dip well and allow to coat by turning both sides.
  • Heat the oil to smoking hot and reduce the flame to low to fry the bajjis.
  • Do not fry in high flame. If you do so the outside batter only will cook whereas the chilli inside will not cook and tastes raw. So will  the batter inside the chilli also not cook.
  • Turn the side and cook both the sides till crispy. Now you will get the nice flavour of the fried chilli.
  • Serve with coconut chutney.
  • Note: Keep enough oil for frying otherwise bajji may stick at the bottom of the vessel.
  • Heat the oil to smoking hot and reduce the flame and cook in low flame till crispy.
