Bitter gourd  is low in calories and dense in nutrients. It has the ability to lower the glucose level in diabetics. It has been used to treat diabetes in traditional medicine. Now commercially available in various forms like juice, extracts and pills.

       Using this veggies regular in our cuisine will be a good option to stay the family members healthy. This is a simple easy to make preparation. The bitterness from the bitter gourd reduced once you add this to curds. I am sure the people those who hates bitter gourd too starts to love this.

Pavakka Kichadi

Preparation Time: 5 minutes

Serves: 5

INGREDIENTS:

Bittergourd, chopped- 1 big
Green chilli-1
Salt- to taste
Curd/yogurt, beaten -1 cup
Oil- to fry

To grind:
Coconut- 1/4 cup
Green chillies-2

To temper:
Oil- 2 teaspoons
Mustard seeds- 1/2 teaspoons
Dried red chilli-1
Curry leaves- 1 strand

Bittergourd Kichadi

PROCEDURE:
  • Grind the coconut and green chilli together as fine paste.
  • Heat oil in a pan and deep fry or shallow fry the bitter gourd with one slit green chillies. Once it is half cooked add some salt water or sprinkle some salt water or pinch of powdered salt in oil and fry them. 
  • Once the bitter gourd loose some of the water content and becomes light drain them from oil and set aside. Do not over fry them. 
  • In pan add the fried bitter gourd and coconut paste and cook for minute and add salt to taste.
  • Now add the beaten curd and mix well and switch off the gas.
  • Heat oil in a pan and splutter the mustard seeds. Then add the broken dried red chilli and curry leaves fry for a second.
  • Add the tempering over the pachadi and mix well.
