Fried rice is a common rice item regularly ordered in restaurants. We love as it is less spicy and it goes well with almost all dry and semi dry and gravy preparations. Kids love fried rice because it is colourful and less spicy. Apart from restaurants nowadays kids stated asking fried rice for their lunch boxes.

Fried rice is an easy to make healthy one pot meal. We can add the veggies of our choice to suit our taste buds. I used to make fried rice some days with sweetcorn to get some tiny bites of corn between the fried rice. Some days with capsicum to get the mild crunchy pungent taste. The amount of soya sauce also can be altered according to our taste buds. I like to add little soya sauce. If you like you can add more soya sauce to get darker colour rice.

Veg Fried Rice

Preparation Time: 5 minutes

Serves-3-4

INGREDIENTS:

Basmathi rice-1 cup
Salt- as required
Oil- 5 teaspoons
Garlic-1 big clove
Carrot, chopped- 1
French Beans, chopped- 5
Cabbage- 1/2 cup
Sugar- 1/2 teaspoon
Aji no moto-pinch (optional; I have not added)
Soy sauce-1 1/2 teaspoon
Pepper powder- 1/4 teaspoon
Spring onion (chopped)-2



PROCEDURE:
  • Half cook the rice with salt and drain the excess water and spread in a plate to cool well.
  • In a shallow broad pan/wok heat the oil and add finely chopped garlic once the flavour arises. The colour of the garlic should not change.
  • Now add the veggies of choice like chopped  carrot, beans, cabbage, capsicum, sweetcorn...etc and sugar and salt. Stir well and cook for a minute if you feel the mixture is too dry sprinkle little water and cook the veggies.The colour of the veggies should not change while the cooking process (should not over cook the veggies).
  • Once veggies are cooked add the half cooked rice, soya sauce and pepper powder. Check for salt and add if needed.
  • Then add the spring onion and mix well to combine.
  • Serve hot with any spicy curry.
