Shrikhand| Kesar Gulab Shrikhand is an Indian sweet made with strained yogurt (chakka) which is further sweetened and flavoured with various items such as saffron, cardamom and rose water or some times with added fruit pulp. It is a traditional sweet generally served in Gujarat and Maharashtra. In Gujarat they consume this shrikhand with savory flaky pooris. Quick to make easy dessert perfect for traditional festivals like Diwali.

Creamy flavourful dessert with added nuts tastes delicious. The nuts adds texture to this dish and the cardamom, saffron and rose water adds more flavour and makes the dish tastes divine.


Kesar Shrikand recipe

Preparation time: 1 hour

Makes: 2 cups

INGREDIENTS:
Curd| Yogurt- 3 cups
Powdered sugar- 1/2 cup
Rose essence- 1/4 teaspoon (or) rose water-1 teaspoon
Milk- 2 tablespoons
Saffron strands- 6-8 strands
Cardamom powder- 1/4 teaspoon
Pistachio, chopped- 10 nos

Shrikand recipe

PROCEDURE:
  • Take a thin cotton cloth or muslin cloth and hung the yogurt on kitchen tap or fridge to stain the water from yogurt for around 1-2 hours.
  • Boil or microwave the milk and add the saffron onto the hot milk; set aside to cool.
  • Now transfer the hung curd to a deep bowl and beat well to remove the lumps to make a smooth mixture.
  • Add the powdered sugar and mix well and combine.
  • Finally add the flavoring ingredients saffron with milk, cardamom powder and rose water and mix well.
  • Refrigerate and garnish with chopped nuts and serve chilled.
  • Note: Use the nuts of your choice. 
  • Add the saffron milk once it is cooled.
  • You could also add nuts with the shrikand and refrigerate.
  • You could hung the curd inside fridge overnight to make the dish in no time.
