Orange Cream Mocktail| Orange Cream Shake is a tasty drink that perfectly suits this summer. Out here summer has been scathing with the heat waves and one cannot tolerate the sun's wrath. The schools shut their doors a bit earlier to safe guard the kids before the actual announced holiday dates. Entering a long parked car at noon time one feels like jumping into a campfire. You just cannot touch the steering wheel nor the breaks. One more day to go to finish this ordeal, so feeling a bit happy to enjoy the summer holidays at home by sleeping extra time in the morning and having nice food.

I think no one hated oranges like me in child hood. But now it is one of my favorite,  might be partly because of the place i stay. My native is such a cool place so rarely we buy oranges or any citrus fruits. I do not like oranges and even detested the cream biscuits with the orange flavour. In short I felt like I was allergic to oranges. Now every thing got changed once I entered Muscat. Now I like oranges and the flavour also started loving it. So the people who love oranges can check the orange based recipes here.

Oranges - 4 large

Sugar - 2 cups (same weight of sugar as the weight of your oranges after peeling)

Lemon- 1/2

home made orange marmalade

PROCEDURE:
  • Use a peeler or knife to remove a thin layer of zest from the oranges. Slice the zest thinly and put it aside.(I used navel orange. If you use kinnow or clementine peel them and scrape the white part using a spoon or knife and proceed)
  • Peel the white pith away from the oranges. Remove seeds. Chop the oranges finely and put them in a large bowl along with the zest.
  • Measure out the same weight or volume of sugar as your peeled oranges, and add it to the bowl. (1 cup sugar for each cup of chopped oranges)
  • In a deep vessel cook the oranges and the peel with sugar.
  • Smear a little bit of marmalade onto a cold plate and check the consistency . If it’s not thick enough yet, then simmer it a little longer.
  • While marmalade is simmering, prepare some clean jars by pouring boiling water over them to sterilize them.
  • When marmalade is finished, ladle it into the jars. Sterilize on jars for longer shelf life.

Candied orange peel| Candied citrus peel recipe is simple to make and it is best for dessert and also for cakes. It is a best garnish for the desserts prepared with oranges or lemon. I have prepared this candied orange peel for my stollen cake recipe and it came out really well. The flavour of the orange peel was amazing in that cake. I have to make a next batch and store it for future use. Same way you could prepare lemon or any citrus peel to make this candied peel.

Tomato Orange Juice: I love to try different juicy drinks. Initially after marriage when I used to prepare drinks I had no idea as to how to make it. Nowadays I have a better understanding on how to go about concocting fruit juices, lassi, smoothie and milk shakes. Earlier I wouldn't add chilled water or ice cubes which makes my drink taste wacky.

Now i prepare the drinks with prior calculation, whether  it would work out or not. Some combinations really surprised me with regards to the taste as well as the colour. This is one such calculated  combination the one I loved it. The colour as well the taste is amazing. Really simple and tasty juice with in 5 minutes.

    Orange Tomato Juice

    INGREDIENTS:
    Tomato, well ripened- 2
    Orange-2
    Sugar- 2 tablespoon
    Salt- big pinch
Chilled water- 1/2 cup+ extra if needed

    PROCEDURE:
    • Roughly chop the tomatoes and add that in a blender jar and blend well to make a puree. Now add half a cup of chilled water with that puree and blend once or twice as this makes the filtering process easy .
    • Pass the tomato juice through a sieve and collect the clear juice from the seeds and peel.
    • Using a normal juice extractor or just by squeezing extract the orange juice with out any seeds.
    • Now add the orange juice with tomato juice and add in the sugar and salt. Mix well with spoon until the sugar gets dissolved.
    • Add extra 1/4 cup chilled water if you feel the consistency of the juice is thick. Add some ice cubes if you wish and serve chilled.
    • Note: Avoid using naatu thakkli which is much sour, use varieties like Bangalore tomato.

In summer days, dehydration is the major issue we face. It could be easily over come by adding more fluid in our diet. Apart from drinking water, fresh fruit juices too keep our body cool. So here's an easy to make simple juice with the ingredients available in your own pantry. This juice has loads of vitamins in it so it is delicious and also nutritious too.

As it is a colourful juice it sure attracts kids. While preparing this juice for kids you could avoid ginger. Personally I do not prefer ginger in fruit juices but I leave that to your discretion. You need not add ginger and one can make the juice with sweetness to one's requirement.

    Carrot Orange Ginger Juice

    Making Time: 5 minutes
    Serves: 2 tall glasses.

    INGREDIENTS:
    Orange- 2 large
    Carrot- 2 large
    Ginger- 1/2 inch (optional)
Chilled water- 1 cup+ extra to dilute if needed.
Sugar- 2 tablespoon (adjust according to your taste)

    Orange Carrot Juice

    PROCEDURE:
    • You could prepare this juice in two ways one easy method is to add the chopped carrots, ginger,  peeled and de-seeded orange pieces and sugar; pulse for some time add chilled water and make it as a fine puree; then pass it through a sieve and extract the clear juice.
    • Another method is, chop the carrot and pulse to make a powder. Now add a cup of chilled water and grind to make a puree.
    • Strain the puree to get a clear juice by pressing well with a ladle. If you want add little more water and extract once again.
    • Extract the orange juice using the normal citrus juicer and add the clear carrot juice extracted earlier. Dilute with half cup of water if needed.
    • Add the sugar to sweeten the juice and mix well.
    • Serve chilled.
    • Note: If you donot like ginger in fruit juice you can skip from adding that.
    • For variation u could add a chopped apple too while grinding.

The pomegranate seeds also known as arils, which are encapsulated in white pith. The pomegranate fruit is low in calories, high in fiber, high in vitamins such as C and K and high in phytochemicals that may promote heart health and help to prevent cancer. As with many fruits, pomegranate seeds are low in calories and rich in fiber. Pomegranate seeds and other fiber-rich foods, such as whole grains, may reduce your risk of developing chronic disease and aid in weight management.

Pomegranate is a very healthy fruit and it is generally used in fruit juices, salads, raitas..etc in cooking. The seeds are sour in taste so combining with other tasty fruit juices makes it more tasty and healthy. Today i am going to share such a really tasty drink to beat this summer !!!

    Pomegranate & Orange Juice

    INGREDIENTS:
    Pomegranate seeds- 1 cup
    Orange(Navel/ Mandarine)(or) Mosambi -1
Chilled water- 1/2 cup (adjust accordingly)

    Water- 2 tablespoons

    Pomegranate &Orange Juice

    • First prepare the sugar syrup by adding two tablespoons of sugar on a flat pan with two tablespoons of water and allow to cook on medium till you get the syrup stage. Set aside to cool. (sticky stage-pisukku padam just before the single thread stage. Because it further thickens on heat)
    • Remove the seeds and add them on a blender jar and blitz the seeds twice or thrice till the juice separate from the seeds. Add half a cup of chilled water and blitz again.
    • Pass the mixer through a strainer and extract the juice by press using a spoon on the mixture.
    • Transfer the contents on a glass and add the orange juice. Add the sugar syrup as needed according to your taste.
    • Dilute if needed with chilled water.
    • Take a glass and on the rim run a slice of orange.
    • Spread some sugar in a plate and move the rim of the glass around to stick the sugar.

The milk flavoured with orange juice is just amazing. When you think about Orange milk shake everyone think wont the milk splits when added on orange juice. It won't split when the milk is perfectly chilled. Even you could slightly freeze the milk to prevent splitting. It is a tasty combo if you make it in a chilled milk.

I have prepared this in low fat milk you could achieve more rich in taste using full fat milk. This is a quick and easy orange milk shake without any ice cream. Easy to make real summer treat. You could freeze them in Popsicle mould and serve as Popsicle too.

Milk, chilled- 2 cups (low fat/Full fat)
    Sugar- 1 tablespoon

    • Extract orange juice using normal juice extractor (or) squeeze using hand and extract without any seeds.
    • In the juicer or blender jar add the extracted orange juice, sugar and the chilled milk.
    • Whip well till frothy, immediately transfer the milkshake on a glass and consume before the chillness leaves.
    • You could pour this milkshake inside a Popsicle mould and freeze and consume while peak summer.

'Strawberry Orangeade' is an easy to make drink in a jiffy using the home made strawberry syrup. Simple delicious and it almost tastes like a sharbath.
