'Pazham Nirachathu' is a traditional recipe, served in the southern Indian state of Kerala. It is consumed as evening time snack and is made out of a special type of banana called “Nendran pazam” cultivated only in Kerala and southern parts of Tamil Nadu. This recipe is very much similar to 'Pazam Pori' but in this case we use rice flakes stuffing and whole banana instead of banana strips.

     In this recipe you can use egg instead of baking powder. You can use only egg white if you feel to cut down extra calories. You can eat this as a breakfast also. Because the goodness of banana and the red rice flakes are nutritious and also filling for your stomach.

INGREDIENTS
Nendran banana (well ripened)- 2 small (or) medium size
All-purpose flour (maida)-5 tablespoons
Rice flour-2 tablespoon
Turmeric powder-pinch
Salt-pinch
Sugar-1tablespoon
Baking powder-½ teaspoon (or) egg-1

FOR FILLING:
Red Rice flakes – 3-4 tablespoons
Coconut- 3teaspoons
Sugar- 2 teaspoons
Ghee- 1 teaspoon
Cashewnut-3 (optional)
Raisins- 6 (optional)

PROCEDURE
  • Wet the rice flakes with hot water.  Add sugar and coconut to the rice flakes. Then in a pan add ghee, roast the cashews and raisins. Add this to the rice flakes mixture and mix well with a spoon.
  • Slit the banana from top to bottom deep down but leaving a centimeter uncut at the bottom using a knife.
  • Keep the stuffing inside the banana press well and keep adding some more till the banana is fully stuffed.
  • Prepare the batter by combining maida,  rice flour, turmeric, salt and sugar. Beat an egg and add to the center of the batter using a whisk or spoon mix thoroughly without forming any lumps.
  • Dip the stuffed banana in the batter and allow to coat all around the banana.
  • Deep fry in hot oil on medium flame till crisp on the outside.
