Strawberry yogurt is a tasty fruit flavored yogurt which could me made with low fat or full fat yogurt. Healthy with the goodness of strawberries and the probiotics present in yogurt good for digestion. You could serve this as a dessert or in small quantities with breakfast. Goes well with crepes, pancakes, waffles, any cereals, snackbars. You could use this fruit yogurt for layering parfait too.

Quick healthy tasty dessert prepared in minutes without much ingredients. Suits for Valentines day too as the colour is with red and pink combination. Do try this healthy dessert or breakfast at this strawberry season!

Strawberry Yogurt recipe

INGREDIENTS:
Strawberries- 10-12 nos
Sugar- 1/4 cup
Hung Yogurt- 1 cup (i used low fat)
Fresh strawberries, chopped- to garnish

PROCEDURE:
  • Add 2 cups of thick yogurt in a muslin or cotton cloth and allow to strain for 30 minutes. Squeeze to remove water and set aside.
  • Remove the stem and leaves from strawberries and roughly chop them. Add the chopped strawberries inside blender jar and add the sugar and blend to make a paste.
  • Remove around 4-6 teaspoons of  strawberry puree and  add the hung curd with the remaining strawberry puree inside the blender.
  • Blend once or twice to make combine well. Do not pulse more as the jar heated up and heat dilutes the curd. So carefully do that.
  • In small serving glasses add  one or two teaspoons of reserved strawberry puree(You could replace it with strawberry syrup too if you have less now of strawberries with you or skip this layer) and then top it with the fruit yogurt and garnish with freshly chopped strawberries.
  • Note: Adjust the sweetness according to your taste.

INGREDIENTS:
Rose Syrup- 3 tablespoons
Lemon-1 large
Water|Soda- 3 glasses
Sabja seeds| basil seeds- 1 tablespoon (optional)
Ice cubes- to serve

PROCEDURE:

  • In a bowl or jug add the ice cubes and then rose syrup, lemon juice and sabja seeds. Then add water|soda and mix well. 
  • Adjust the amount of syrup and lemon to get the perfect taste according to your taste.
  • Note: You could use cold water instead of ice cubes.
  • Adding sabja seeds is optional but it adds taste and texture to the drink.
  • You could add a teaspoon of crushed ginger juice to add extra kick to the drink.
  • You could use rose water|essence and sugar instead of rose syrup to make this same drink.

Strawberry Parfait which could be served as a dessert or a breakfast. So easy to make and healthy as well. I have used whole wheat diet flakes and chopped nuts in this recipe you could replace it with your favourite cereal or cereal bars or museli of your choice. For colour contrast i used kiwi you could use any fruit of your choice. You could drizzle little strawberry syrup on top of creamy layer if you serve this as a dessert. You could skip cereals and could make just with creamy layer and with fruits and honey or syrup of your choice. Hope this dessert suits well Valentines Day! Simple Quick and Yummy dessert ready in minutes!

Strawberry Kiwi Parfait recipe

INGREDIENTS:
Strawberries-8 nos
Kiwi-1
Honey| strawberry syrup- 1 tablespoon
Cornflakes| Muesli|Snack bars- I used diet whole grain oats with some chopped nuts- 1/2 cup
Hung yogurt-1 cup
Whipping cream- 1 cup
Powdered sugar- 1/4 cup



PROCEDURE:

  • Add about two cups of thick yogurt in a muslin or cotton cloth and tie well; allow to drain the water for 30 minutes. Squeeze well to drain excess water; set aside.
  • Whip the cream using electric beater, once it reaches soft peaks add the powdered sugar and beat well. Add the hung yogurt and beat well till it reaches stiff peak stage.
  • Remove the leaf and stem from the strawberries; peel the kiwi and chop them them both. Add the 1-2 tbsp of honey to coat the fruits; set aside.
  • Roughly break the cornflakes and mix some chopped nuts like almonds or walnuts.
  • In a serving glass add a dollop of yogurt and cream mixture then layer with some flakes and then top it with some honey coated juicy fruits.
  • Repeat the layering twice or thrice as you wish.
  • Note: Health continuous people can avoid cream and can only use hung yogurt for this dessert.
  • You could skip cereal and add extra strawberry syrup to make it a rich tasty dessert.

Eggless Pomegranate Ice cream| No churn pomegranate ice cream is a easy dessert which perfectly suits Valentines Day. The pink colour icecream with the deep ruby red pomegranate seeds an ideal treat for eyes as well as for taste buds. I have not added any extra flavouring for this ice cream. You could add lemon zest or vanilla or rose essence for extra flavour. Try this dessert for this Valentines Day!!

INGREDIENTS:
Pomegranate seeds- 1 cup
Whipping cream- 250-300 ml
Powdered sugar- 1/2 cup (adjust according to your taste)
Vanilla essence (or)Lemon zest(or)Rose essence- 1 teaspoon

PROCEDURE:
  • In the blender add the pomegranate seeds and blend to make a paste; strain to extract only the juice.
  • In a bowl add the cream and start to whip once it starts to form soft peaks add the sugar little by little according to your required sweetness. Add the pomegrante juice and flavouring of choice and whip till the mixture gets a smooth creamy pale pink colour.
  • Transfer it to a airtight container and freeze for 2 hours.
  • Remove the ice cream from fridge and whip the frozen ice cream with electric beater for a couple minutes and keep into the freezer. Repeat this process 3 times at regular intervals to prevent the crystal formation and to keep the ice cream creamy.

Peanut podi| Groundnut Podi|Verkadalai podi is an easy to make tasty chutney powder tastes great with idli dosa and also even for rice with a teaspoon of ghee. I have made many healthy chutney powder varieties such as Idli podi with chana dal, Kollu podi, Curry leaves podi, Flaxseed powder, Veppam poo podi.

This goes well with all breakfast items you could make Podi dosa with this. Or you could sprinkle on any breakfast like upma to make it tasty or spicy. The colour of the chutney powder varies depends on the chilli variety you use. You could make it spicy or less spicy-one.

Peanut Chutney podi recipe

INGREDIENTS:
Peanut| Ground nut - 2 cup
Roasted chana dal|gram dal - 1/2 cup
Garlic - 8-10 cloves
Red chilli - 10-18 mix both spicy and red color giving chilli variety
Curry Leaves - handful
Tamarind - lime size
Oil- 1 tsp
Asafetida- 1/2 teaspoon
Salt - to taste

PROCEDURE:

  • Roast the peanuts till the skin starts to brown. Remove from pan and add the roasted chana dal and roast till crisp and golden; allow to cool.
  • Once the peanuts cools down roughly remove the skin by squeezing between hands.
  • Add the roasted chana dal with this and set aside.
  • Heat a teaspoon of oil and add the garlic, red chillies, curry leaves, tamarind and roast till the red chillies and curry leaves turn crispy.
  • Remove from heat and add asafetida and salt; allow to cool.
  • Add everything inside the blender jar and grind to make a coarse powder.
  • Spread this powder on a wide plate cool the powder and store in an airtight container.

Strawberry Shrikhand recipe is a variation to the Indian dessert made with hung yogurt. It has been prepared gernerally with kesar|saffron with nuts(Kesar Shrikhand). Here i have given a twist by using strawberries in this dessert as i very well know the yogurt goes well with strawberries. As strawberries are in season i have used fresh strawberries for this recipe off season you could use frozen strawberries to make this yummy dessert. We liked the taste of it do try at this strawberry season!





INGREDIENTS:
Strawberries- 8-10 nos
Sugar- 1/4 cup
Hung Yogurt- 1 cup
Cardamom- pinch(optional)
Pista| Almonds, chopped- 1 tablespoons
Fresh strawberries, chopped- to garnish


PROCEDURE:
  • Take 2 cups of thick yogurt and keep in a muslin or cotton cloth. Gather the edges and make a knot and hang on a kitchen sink tap or in a refrigerator with a collecting bowl to collect the whey for about 30 minutes. Squeeze the cloth well to remove extra whey water; set aside.
  • Remove the stem and leaves from strawberries and roughly chop them. Add the chopped strawberries inside blender jar and add the sugar and blend to make a paste.
  • Add the hung curd with the strawberry puree inside the blender. Add cardamom powder if you wish.
  • Blend once or twice to make combine well. Do not pulse more as the jar heated up and heat dilutes the curd. So carefully do that.(You could use hand held electric beater too)
  • Transfer on two serving glasses and garnish with chopped pista or almonds and freshly chopped strawberries.

Strawberry sorbet is an easy to make dessert especially at Strawberry season with fresh or frozen strawberries. Easy as well as tasty could be made in a jiffy. Best dessert at the time of guest arrival. Just like ice cream scoop out and serve with any dessert combo. Colourful and attractive dessert! You could prepare this for the Valentines Day too.

Strawberry Sorbet recipe

INGREDIENTS:
Strawberries- 15 nos big, 250 grams
Sugar- 3/4 cup
Water- 1/4 cup
Lemon Juice- 1/2
Thick Yogurt- 2 tablespoons

Easy Strawberry Sorbet recipe

PROCEDURE:
  • In a pan add the sugar and water and make a syrup. Allow to cool.
  • Roughly chop the strawberries and grind to make a puree and strain if you donot like the tiny seeds in the puree.
  • In a bowl add the strawberry puree, sugar syrup,yogurt and lemon juice and mix well with a whisk or electric beater.(i was lazy and done it inside the blender jar)
  • Cover it with a tight lid or cling film and freeze for 3-4 hours.
  • Remove the sorbet from freezer and beat well again to smooth consistency.
